I don’t know about you, but I am always looking for ways to incorporate more chocolate into my diet. I found this interesting recipe for chocolate-espresso soup with marshmallows from our friends across the border at canadaam.ctvnews.ca and figured I would share it with you guys! Prep time for this recipe is 10 minutes and in total it should only take 15 so you can get your chocolate fix quick.
What you will need
- 2 cup(s) milk
- 1/2 cup(s) heavy cream
- 3 tablespoon(s) sugar
- 2 tablespoon(s) espresso powder
- 1/4 teaspoon(s) salt
- 8 ounce(s) bittersweet chocolate, coarsely chopped
- 1 1/3 cup(s) mini-marshmallows, or more to taste
- Shaved chocolate, for garnish
Directions
In a medium, heavy-bottomed saucepan over low heat, bring the first 5 ingredients to a gentle simmer. Whisk in the chocolate and cook, whisking constantly, until the chocolate has melted and the mixture is smooth. Ladle into warmed shallow bowls. Divide the marshmallows among the bowls, garnish with shaved chocolate, and serve soup hot.
