O Canada – Smoked Salmon Tartare




This recipe really brings me back to my days living in Canada. Smoked Salmon is a specialty of British Columbia and was also one of the first foods my brother Brian Poturnak and I truly fell in love with. When I saw this recipe on kitchendaily.com, I just had to share it!

Smoked Salmon Tartare – 16 servings


What you will need:



  • 4 Tbsp reduced-fat sour cream

  • 1/4 tsp chopped fresh dill

  • 16 slices radish

  • 2 oz smoked salmon, chopped

  • dill sprigs for garnish


Combine sour cream and dill in a small bowl. Top each radish slice with salmon, a dollop of the dill sour cream and a sprig of fresh dill.


The best thing about this recipe is how EASY it is!

Chocolate-Espresso Soup With Marshmallows – Manila Poturnak




manila poturnak chocolate espresso soup I don’t know about you, but I am always looking for ways to incorporate more chocolate into my diet. I found this interesting recipe for chocolate-espresso soup with marshmallows from our friends across the border at canadaam.ctvnews.ca and figured I would share it with you guys! Prep time for this recipe is 10 minutes and in total it should only take 15 so you can get your chocolate fix quick.


What you will need



  • 2 cup(s) milk

  • 1/2 cup(s) heavy cream

  • 3 tablespoon(s) sugar

  • 2 tablespoon(s) espresso powder

  • 1/4 teaspoon(s) salt

  • 8 ounce(s) bittersweet chocolate, coarsely chopped

  • 1 1/3 cup(s) mini-marshmallows, or more to taste

  • Shaved chocolate, for garnish


Directions


In a medium, heavy-bottomed saucepan over low heat, bring the first 5 ingredients to a gentle simmer. Whisk in the chocolate and cook, whisking constantly, until the chocolate has melted and the mixture is smooth. Ladle into warmed shallow bowls. Divide the marshmallows among the bowls, garnish with shaved chocolate, and serve soup hot.

Avocado Fritters




Ah Avocado Fritters, what a delicious way to eat smart and healthy for the summer season. Just when your feeling for something crispy and savory, help yourself to these avocado fritters. This delicious idea was coined by the editor of treehugger.com, Jaymi Heimbuch.

Ingredients:


Oil (For Frying)

2 avocados

1 egg, beaten

1 cup bread crumbs

1/2 tsp salt


Prep:


1. Mix bread crumbs and salt in a medium size bowl. Set aside.


2. De-pit and slice the avacado into wedges, romove skins. Set aside.


3. Beat eggs. Set aside.


4. In a large frying pan heat the vegetable oil until it shimmers.


Cooking:


1. Take the avacado wedges and dredge in egg-wash.


2. Coat egg drentched avacado wedges in bread crumbs


3. Carefully place them in the hot oil and fry them for about 2-3 minutes. Until golden brown, turning them once.


4. Remove them with a slotted spoon and place them on a plate lined with paper towels to absorb the excess oil.

Jaymi Heimbuch introduces using mayonaise or salsa as sauce. I like to eat mine with Sriracha Sauce. I like it spicy!
